Description: The latest contribution is the development of methodology for the obtaining soursop powder (Annona muricata L.) by spray drying. In this case the invention was to establish the optimal conditions for preserving the greatest possible amount of volatile compounds associated with the aroma and flavor of the soursop during drying, obtaining a powdered product with longer shelf life and with various applications food industry.
Profit, Social Impact: The main success is that with this project “Spray drying of soursop (Annona muricata L.)” was obtained the “Award Scientific Merit” by the Municipal Government of Zapopan, Jalisco, Mexico, which was also considered full trajectory of investigation. The social impact is important because it is building a methodology that leads the process, development and consumption of soursop flavor of natural origin. The academic, scientific and technological impact is also important as to promote future scientific investigation in this area of spray drying gave food bases. As the taste for science, technology and innovation in young students through the various presentations of this project “Spray drying of soursop (Annona muricata L.)” it was also promoted, in some universities and scientific forums in the which the project was presented at the invitation of the organizers.
